“Low Fat, Deep Fried” is no longer an oxymoron. Good Harbor Fillet’s Fun Shapes, fried fish for kids (available in select grocery stores), has less than four grams of fat per serving – about a third of the fat and two thirds of the calories of regular fried fish. The company hopes to have a whole line of even lower-fat fried seafood (less than three grams of fat per serving) by the end of the year. Its trick is encasing the fillets in a thin film of specially treated protein, which keeps moisture in and cooking oil out. After licking her fingers, one of our taste testers called the fish “delicious, with less than half the guilt.”
And the future looks even lighter. The coating technique works just as well on chicken, beef, and shrimp, says inventor Steve Kelleher, PhD, founder of Proteus Industries. The low fat French fry, however, might take some time (one can always dream).
